History of Osteria a Priori
Thus, Alessandro Casciola is the creator of this culinary house. His story goes that he grew up in the heart of his hometown, surrounded by the lively town square and his father’s thriving fruit and vegetable market. His father’s daily walk through the fields of Foligno in the 1960s, picking the freshest produce, unwittingly made him one of the first advocates of the farm-to-table concept, igniting his curiosity and love for the region’s exceptional offerings.
While studying economics, he continued to support his father’s business. Eventually, he went on to work in regional agri-food promotion and, later, wine tourism. Over the course of a decade, these roles deepened his knowledge of local food and wine products.
With a secret dream, he left the confines of a drawer where he kept aspirations to open a wine store and restaurant celebrating the flavors of Umbria. He discovered the perfect location on Via dei Priori, a historic street, where he could manifest his vision and continue his father’s legacy, exploring and showcasing artisanal products in his two taverns, both in person and online.
Finally, the Osteria’s menu features traditional Umbrian dishes, showcasing the region’s culinary heritage with simplicity and authenticity.
